I just love quick meals.
Especially meals that will fill my belly, satisfy my taste buds, and help me to heal all at once. Who says you have to give up pasta while eating healthy?
This pasta not only tastes great, but it’s great for you! The rotini is made out of nothing but organic white spelt flour.
Because more and more people are dealing with wheat sensitivities, spelt offers an alternative to wheat flour. Spelt is a healthier type of grain that’s more easily digestible by the body than traditional wheat. Although it’s closely related to wheat, it’s unparalleled when it comes to nutrition. Although it does contain gluten, it’s much better tolerated by others with a sensitive digestive tract than wheat. Plus, it’s an excellent source of nutrients and can easily be used in common baked good recipes. It’s a very, very good source of fiber, which helps those who battle with constipation. It also contains a great amount of iron, potassium, and zinc. It’s excellent to consume during any healing journey, especially one of estrogen dominance and people with skin problems.
Spelt’s nutrition is amazing! It’s an excellent source of protein and fiber. It helps in weight loss because it’s so full of fiber and protein. It gives you that, “full” feeling after eating, which makes you want to eat and snack less. And, due to its fiber content, it helps to keep the gut healthy. It also helps poor circulation (making it great for women with anemia, a side effect of fibroids), helps boost the immune system, takes down high blood pressure, and it lowers blood sugar levels–to name only a few of its many benefits!
The rotini I used in this recipe is Biona Organic Spelt Fusilli White. I love that it only has one ingredient: spelt. You may not be able to find it at your local grocery store, so you’ll probably have to order it. You can order it here from Amazon, which is where I get mine. It’s superior in quality and taste, and well worth the money, trust me. Your health is worth any price.
In this lifestyle, cooking is a must, and we all know that can get tiring. Just the thought of having to cook can be enough to turn a lot of people off of this healthy living.
But fear not! Just because you’ll be cooking more doesn’t mean you have to spend hours in the kitchen. Recipes exist that do not require much to make and won’t have you skimping on taste. The longest part of making this meal is the preparation of your veggies.
Easy Peasy Veggie Rotini
Ingredients
- 1 box of organic white spelt pasta.
- 1/2 organic red onion, chopped
- 1 whole organic zucchini, chopped
- 1 palm full of organic cherry tomatoes, chopped
- 3 or 4 organic mini peppers, chopped
- 3 tbsp grapeseed or avocado oil, or add enough oil so that the bottom of the pan is covered
Seasonings:
- Whatever you want! I used:
- 1/2 tsp Pink Himalayan Sea Salt
- 1/2 tsp Basil
- 1/4 tsp Cayenne powder
- 1/2 tsp Oregano
- 1 tbsp Onion powder
- 1 tsp Paprika
Instructions
- Cook the pasta according to the instructions on the box. All you have to do is add the pasta to boiling water. Make sure the pasta is covered with water.
- Add a little oil (maybe two tablespoons) to the pasta and water so the pasta won’t stick together. Stir frequently.
- Cook the pasta for 8-10 minutes or until the pasta is softened to desired tenderness.
- Drain the water
Veggies:
- Add grapeseed oil to a pan and heat to medium heat. Be sure your veggies are chopped by this point. You don’t want to leave the oil heating too long.
- After washing and chopping your veggies, add them to the pan. They should sizzle lightly in the pan
- Season your veggies with the seasonings, adding more if needed.
- Once the veggies are softened, add them–oil and all–to the cooked rotini, and stir all together.
- Feel free to add a little more salt or seasonings if needed.
