Decadent, rich, gooey, chocolatey banana bread that’s actually much healthier for you than commercial bread!
What a treat this bread is!
In my battle with acne and uterine fibroids, I had to steer clear of desserts that aggravated those conditions. As you may be aware, processed sugar is the enemy to your health and healing. And a real challenge I encountered in my battle with candida and BV was satisfying my dessert palate without aggravating my existing conditions.
Understand this: If you’re having major symptoms of candida or suffering from BV (bacterial vaginosis), you may need to abstain from all sugar while you deal with your condition. I had to. Bacterial and fungal infections love sugar, even from natural sources, such as honey, and as painful as it is, you have to take away their beloved sugary foods, so they can starve while you heal. It wasn’t until I did several detoxes, and restored my body back to some semblance of health so it could handle sugar again without going crazy that I decided to make and eat this as a treat.
Also, if you’re trying to eliminate uterine fibroids naturally, or heal from any other infirmity, I highly suggest that you have desserts like this sparingly, even eliminating them until your physical health is where you want it to be. However, I completely understand how difficult it can be at the beginning of your health journey, having to already eliminate so much of your favorite foods, including decadent sweets. This could be a real struggle.
It certainly was for me. Thankfully, I stumbled upon this wonderful treat while being adventurous in my culinary skills. In learning how to eat differently, I discovered I could still have some desserts that weren’t fruit, and wouldn’t wreak absolute havoc on my body. I just had to be mindful of the ingredients. The sweetness of the bread comes from manuka honey/agave. The flour is spelt, wheat that is MUCH easier on the digestive system and much better for you than enriched, bleached flour. The milk in it is creamy, delicious, vegan coconut milk. The red bananas provide the moisture. They’re also packed with immune-boosting goodness, vitamin C (yes, they’re loaded with vitamin C), and fiber. You can’t taste them at all once they’re in the batter. And even the chocolate chips are vegan, though they are sweetened with cane sugar. But, hey. I say live a little. I used the Enjoy Life semi-sweet mini chips. If you prefer not to use the chocolate chips, you can absolutely leave them out.
This bread is such a great delicacy to have in my recipe pocket. It’s so rich, and moist, and gooey. It’s absolutely perfect for chocolate lovers!

Ooey Gooey Vegan Chocolate Banana Bread
Ingredients
1 2/3 cup overripe mashed red banana
- 2 1/2 tsp pure vanilla extract
- 1/2 cup canned coconut milk
- 3 1/2 tbsp melted coconut butter OR 2 tbsp milk of choice
- 2/3 cup of raw manuka honey or agave
- 1/4 cup coconut sugar OR raw manuka honey or agave
- 1 3/4 cup spelt flour
- 1 tsp baking soda
- 3/4 tsp salt
- 3/4 tsp aluminum-free baking powder
- 1/2 cup plus 2 tbsp raw organic cocoa powder
- 1/2 cup mini chocolate chips in the batter plus regular chips for decoration, optional
Instructions
Measure banana after mashing, not before. Be sure it's mashed well.
Preheat oven to 350 F and grease a 9×5 loaf pan very well, going up the sides.
- In a large mixing bowl, combine together all the ingredients from banana to the sugar or additional sweetener (the first 6 ingredients).
- In a separate bowl, combine all the remaining ingredients and stir very well, making sure there are no lumps from the flour
- Pour the dry ingredients into wet ingredients, and stir until just evenly combined. Do Not Over mix.
- Transfer the batter to the loaf pan and spread out evenly. If you want, sprinkle some chocolate chips over the top of the banana bread and press down.
- Bake 35 minutes. Then turn off the oven but DON’T open the door! Let it sit 10 additional minutes in the closed oven before removing and slicing.
- This banana bread tastes even sweeter the next day, and it freezes well after slicing.
