This recipe has officially sold me on some chia pudding!
First, I want to officially apologize for how late I am to the chia pudding game. I didn’t understand the error of my ways. Secondly, I want to begin making up for that with this awesome recipe!
I’m not even entirely sure what drew me to this recipe. I honestly think I recently saw someone make some chia pudding and I just decided to give chia pudding another try.
Man, I’m so glad I did! Because now, I can officially hop on the “I love chia seed pudding” bandwagon.
Chia Seeds
What’s not to love about this incredibly healthy superfood?
I love that with each bite of my chia seed pudding, I’m getting a healthy dosage of OMEGA-3 fatty acids from the chia seeds.
Chia seeds (Salvia hispanica) have become one of the most popular superfoods in the health community. They hail from a species of flowering plant in the mint family, and they are native to areas of Mexico and Guatemala but they’re commonly cultivated in many areas in North and South America.
Chia seeds contain more fiber than even flaxseeds and are especially rich in soluble fiber, which will help lower cholesterol levels, reduce your appetite and promote regularity. They are also easy to digest, and unlike other types of seeds, they can be consumed either whole or ground. Submersed in liquid, they quickly form a natural gel that’s very beneficial to your colon.
These seeds are also a very versatile ingredient that works well in a lot of recipes–they can even be used as an egg replacement in vegan dishes. You’d be hard-pressed to visit any wellness website without hearing about chia seeds. They are a very popular star ingredient in many healthy eating recipes, ranging from baked goods to protein bars to smoothies and beyond.
Plus, they have a long list of some heavy-hitting nutrients, including fiber, protein, manganese, calcium, along with plenty of antioxidants.

Very Berry Chia Pudding Recipe
Now that we know how nutritious chia seeds are, let’s get to using them to create this super yummy pudding.
Very Berry Chia Pudding
Ingredients
- 1/2 cup canned, full-fat coconut milk
- 1/2 cup almond milk
- 1 tablespoon pure vanilla extract
- 1-3 tablespoon pure maple syrup (or healthy, natural sweetener of choice) sweetened according to your liking
- 1 tablespoon almond butter
- 1/4 cup chia seeds
- 2 cup organic strawberries
- berries and granola to top
Instructions
- Whisk together all the ingredients, except the chia seeds
- Add the chia seeds and whisk together again to make sure everything is combined
- Pour the mix into a storage container and place it in the refrigerator. After twenty minutes, give the mix another stir to make sure everything is evenly combined.
- Leave the chia pudding in the fridge overnight so it can properly settle before layering and topping it with fruit. If you can't wait that long, then that's OK. The pudding solidifies pretty quickly and should be ready to devour in a couple of hours, if that long.
- In the morning, blend the strawberries with 1/2 tbsp (or however much you'd prefer) of honey, maple syrup, agave, or natural sweetener of your choice in a food processor. Divide the mixture between two glasses
- Add as little or as much of the chia pudding as you'd like to your glasses
- Top each with blueberries, chopped strawberries, and cinnamon granola (or whichever granola you'd like).Enjoy!
